Vacuum pears: Peel the pears (or not), cut them in half and remove the core.
Put in a bag with all other ingredients and draw vacuum.
Steam 45 "at 95 °, then place in ice bath.
Now the pear is ready for use, it is cooked and can therefore be eaten cold or warmed up.
Baking is also very tasty by the way.
Pancakes: Put the flour, salt, the sugar and the marrow of the vanilla stitches in a large bowl.
Add a little less than half of the milk and beat everything to a thick smooth porridge.
Now add the eggs and mix, and then the rest of the milk, do you have lumps? Don't panic, just go with the hand blender.
Warm a frying pan on the heat, and add small dash of vegetable oil.
Let it roll well or rub with a brush.
If the pan is hot, pour a ladle of dough into the pan and make a turning movement so that you get a round even pancake.
Let bake for a minute, if the top of dough no longer looks raw you can turn it around and bake for a minute until it sees golden brown.
Bake the rest of the dough further to pancakes.
Place 2 pancakes per plate, place a dot of yogurt on each pancake, cut the pears into fan shape, also place them on the pancake, and finish with finely chopped mint.
