2 large tomatoes
1 tbsp tomato concentrate
1 shallot
Pepper from the mill
Fleur de Sel
1 knob of butter

Preparation method

How do you make this?

Peel the shallot and finely chop. Emonde the tomatoes: Cut tomato into 4, cut flesh away (put in lettuce or soup) and cut the tomato into cubes.

Let the lump of butter melt in a saucepan and let Shallot rise so that it is soft, add the tomato cubes, hold a tablespoon about to the side, and stir in the tomato concentrate firmly. Season with salt and pepper. Let it simmer for a few minutes. Add this mixture and the raw cubes of tomato to the Béarnaise sauce, beat well and serve immediately.
