Meat of 4 chicken thighs from a Hoevekip
pepper and salt
2 tablespoons of olive oil
1 small red chili pepper
4 cloves of garlic, in slices
700 ml of tomato sauce
2 bulbs Buffelmozzarella, in slices
70 g freshly grafted Parmesan cheese

Preparation method

How do you make this?

Cut the chicken meat in half and beat the fillets between two pieces of plastic film with a rolling roll. Season with salt and pepper. Heat the oil in an oven -proof frying pan and color the fillets well on both sides.

Fry the chili pepper and garlic for a moment in the cooking fat of the chicken and pour the tomato sauce over it.

Divide the slices of mozzarella over it. Sprinkle with Parmesan cheese.

Set the oven to maximum and grill position. Place the pan with chicken in the oven for 10 to 15 minutes. Serve if the cheese has a golden crust.

For Grace I serve pasta with that. Wim and I like to have extra grilled vegetables or a salad.
