1 bone fresh tarragon
100 ml of white wine vinegar

Preparation method

How do you make this?

Pick the dragon leaves of the stiff twigs, place in a jar and pour vinegar on it, push Dragon well under it.

Prepare the Hollandaise sauce. Slightly squeeze the dragon leaves, chop them and stir them under the Hollandaise sauce. Taste and season with salt and pepper if necessary. Keep the sauce warm in the Bain-Marie.
