4 pieces of salmon fillet, with skin
8 tablespoons basil pesto
1 tablespoon finely chopped pistachios
1 lemon
Salt and pepper

Preparation method

How do you make this?

Preheat the oven to 160 °C and lightly grease a baking sheet with some oil.

Season the salmon with salt and pepper and place it on the baking sheet. Spread the pesto over the top of each fillet.

Sprinkle with pistachios to form a sort of crust. Bake for about 15 minutes in the oven, until the fish is just cooked.

In the last five minutes, turn on the broiler to make the crust crispy. Grate some lemon zest over the fish.

Serve with a green salad, sautéed green beans, or new potatoes.
