350 g Brussels sprouts
350 g peas, fresh or frozen
1 sweet onion, finely chopped
2 sprigs of rosemary
3 sprigs of lemon thyme
1 knob of butter or oil

Meatballs

500 g ground beef
300 g ground chicken
1 shallot, finely chopped
1 teaspoon dried thyme
1 egg
3 to 4 tablespoons breadcrumbs + some extra for the balls
1/2 bunch of flat-leaf parsley, finely chopped
2 tablespoons Worcestershire sauce
pepper and salt

Preparation method

How do you make this?

Remove the brown leaves from the Brussels sprouts and cook them for about 5 minutes al dente in salted water. Drain, shock them under cold water, and let them drain well. Cut them in half.

Place a fireproof dish on the heat and add oil or butter and the finely chopped onion with half of the thyme and rosemary. Let it sauté for a moment. Remove from heat and mix in the Brussels sprouts and peas.

Mix all the ingredients for the meatballs with the ground meat and form eight large balls. Push them between the Brussels sprouts.

Push sprigs of rosemary and thyme in between. Choose the steam oven function and select low steam, set your oven to 200 °C, and bake for 30 minutes.
