800 g hare of wild salmon (without bones and without skin)
1 red onion
pepper from the mill
Fleur de Sel
Sixthe of 1 Citroen

Preparation method

How do you make this?

Remove the brown parts of the salmon and check for bones.

Finely chop: first in patches, then in strips and then in cubes.

Finely chop 1 red onion and mix.

Season firmly with pepper and add sixths of 1 lemon and salt.

Mix well together.

Transfer in the fridge with kitchen foil. The tartar must be served very cold.
