1 Klont butter
2 pork tenderloin of about 900 g at room temperature
250 ml room
200 ml of veal or beef stock
2 tbsp strong mustard
Pepper and salt

Preparation method

How do you make this?

Preheat your oven to 150 °.

Remove the meat from the fridge one hour before baking, season with salt and pepper.

Let the butter foam well in a warm pan and color the meat around nicely for 5 to 8 minutes (depending on the thickness) so that it gets a nice golden brown crust.

Place on a plate and put in the oven for 5 minutes.

Drain the fat, extinguish with the brown stock and the cream, season with salt and pepper, let it reduce a little and finish with the mustard, beat the lumps firmly.

Cut your meat into slices and serve the sauce.

Fits perfectly with Stoemp, croquettes and fried green beans.
