Biscuit: Preheat the oven to 180 ° C. Grease a spring form. Beat the eggs and sugar lightly for 10 minutes and then carefully mix the sifted flour and evenly. Pour the dough into the baking tin, iron it smoothly and bake for 45 minutes at 170 ° C.
To be sure that the dough is baked enough, pierce it with a saté stick. When the baton comes out dry, the biscuit is done. Let cool in the mold for 5 minutes and then turn on a rack. Allow to cool completely.
Frosting: Beat the whipped cream almost stiff. Beat the mascarpone with the vanilla and the cane sugar and carefully mix the whipped cream under it. Keep cool.
Mix the honey, berries and the lemon juice into a thick coulis.
Cut the biscuit into 4 to 5 slices. Place a slice of biscuit in a cake pan and brush it with a layer of coulis, but stay 2 cm away from the edge. Brush or spray the cream on top and continue working in layers: biscuit, coulis and whipped cream. You no longer have to provide a coulis on the upper biscuit layer.
Finish the side and top with the cream and spread nicely evenly. Finish with nice accessories, possibly a little smarties and sprinkles in the color of his/her favorite hero !!
