Preparation method

How do you make this?

Heat the olive oil in a large pan.

Add the finely chopped onion, garlic, pancetta and chili, together with the rosemary, oregano, and smoked paprika powder. Let this caramelize for about 5 minutes.

Mix in the tomato concentrate and let it fry. Deglaze with the red port and let the moisture evaporate slightly. Add the finely chopped fennel and carrots. Stir well.

Mix in the beef and break it into smaller pieces with a spatula. Add the tomato passata, season with black pepper and salt, and add thyme and bay leaf.

Let the sauce simmer for about 1 hour with the lid on the pan on low heat.

Meanwhile, cook the pasta according to the instructions on the package.

Serve the pasta with the bolognaise sauce and sprinkle richly with freshly grated Parmesan cheese.
