Caramelize onion: Cut the onion into fine slices and fry them on a low heat in 1 tablespoon of olive oil. Keep stirring regularly until they are deep brown and caramelized. This takes about 20-25 minutes.
Cooking pasta: cook the pasta according to the instructions on the package.
Bake mushrooms: pull the oyster mushrooms in strings. Add another tablespoon of olive oil to the pan with the onion and fry the mushrooms until golden brown.
Herb & sauce: Stir the tomato concentrate and smoked paprika powder through the mushrooms and fry for a while. Then add the whipped cream and most of the pecorino.
Merging: Mix the boiled pasta and crispy chili oil through the sauce. Stir well and serve immediately.
Finish: Finish with extra pecorino and chili oil to taste.
