Prepare dough: remove your dough from the freezer and put the jars in a high bowl with hot water. Let it thaw and rest for 1 hour and 50 minutes.
Decort the mackerel, so that you no longer have a skin or bones, just the pieces of fillet.
Peel the onion and cut into fine slices with a mandolin. Put in a bowl and pour the vinegar over it.
Grate the Parmesan cheese.
Stretching dough: Put 3 tbsp semolina in each jar. Use a lot of flour to prevent the dough from sticking. Scrape your fingers down along the sides. Place the dough on the table with all the flour. Always start to stretch from the center to the outside, always stay 1 cm from the edge. Now lift and remove excess flour.
Spread a spoon of pesto in half and sprinkle the grated mozzarella over it. Pleat, press the edge and bake for about 5 minutes in a preheated pizza oven (between 380-430 ° C).
Turn it on its axis to cook and color evenly. Take it out.
Sandwich fill: open the pizza sandwich again and fill with the tomato slices, mackerel pieces, arugula, pickled onion and Parmesan cheese. Finish with chili oil.
