1 kg nicola fries sucking (half cooked half raw, with peel)
Fresh mayonnaise
2 tbsp grape seed oil
Pepper and salt

Smoked Ketchup:
6 San Marzano tomatoes (large oval tomato)
2 tbsp brown sugar
4 tbsp of white wine vinegar/ apple cider vinegar/ elderflower vinegar
1 tbsp tomato concentrate
2 cloves of look cut
1 chili pepper cut roughly cut
1 stick cinnamon
1 KL Worcester sauce
1 star anise
½ tbsp tabasco
1 tbsp of rapeseed oil

2 spring onion

Preparation method

How do you make this?

For the ketchup: cut the tomatoes into pieces.

Place this in a bowl together with the chili pepper, garlic, brown sugar, vinegar, tomato concentrate, worcester sauce, tabasco, rapeseed oil, stick cinnamon and star anise.

Mix everything well.

Place the dish in the BBQ and simmer for 2 hours at 120 ° C.

The potatoes: cut the fries into slices or cubes with the skin.

Add the grape seed oil and season with salt and pepper.

Put them in the BBQ at 200 ° C until they are cooked, stir regularly so that they color and are nicely crispy on all sides, the time will depend on how large they are cut and the temp in your BBQ.

After 2 hours, remove the mix for the ketchup from the BBQ.

Take the stick cinnamon and star anise out.

Put all the other ingredients in a pot and mix everything until you have a smooth mass.

Once the fries are cooked, remove them from the BBQ.

Place them on baking paper and divide them on plates.

Put the fresh mayonnaise in a piping bag and spray it over the fries.

Finish with the homemade smoked ketchup and finely cut spring onion!
