3 yolks
125 g butter at room temperature
2 tbsp water
Juice of 1 lemon
Pepper and salt
1 good spoon half whipped cream

Preparation method

How do you make this?

Place a high saucepan with water on the heat, bring it to the boil. Put a glass bowl on it so that the bottom of the bowl just touches the water.

Put the yolks, water, pepper, salt and lemon in the bowl and beat.

Always let it boil slightly.

Beat until you get a sturdy foam and no more moisture can be seen in the foam at the bottom.

Add the butter piece by piece.

Once everything is flopped lightly, taste it and possibly season with salt and pepper.

Now you have a hollandaise sauce, beat the tablespoon of whipped cream and you have musline sauce.
