225 g whole wheat flower
7 g dry yeast
15 g olive oil
400 ml of hot water
12 g fine salt
50 ml of hot water (extra)
1 tbsp raz el hanout herbs
2 tbsp black roasted sesame seeds
3-4 ice cubes

Preparation method

How do you make this?

Mix dough: mix the flour, yeast, sesame seeds and herbs in a bowl. Add the olive oil and 400 ml of hot water. Stir everything well with a spatula. Cover and let it rest for 30 minutes.

Add salt: Dissolve the salt in 50 ml of hot water. Mix this through the dough, which has since become a bit softer and lighter. Let the dough rest for at least 4 hours, until it is doubled, airy and bubbly.

Preheat the oven: Place a cast iron pot with lid in the oven. Preheat the oven to 230 ° C and let the pot become hot for at least 30 minutes.

Forms and bins lay baking paper ready and sprinkle with sesame seeds. Pour the dough (in one whole or divided into six portions) on the baking paper. Remove the hot cast iron pot from the oven. Place the ice cubes in the pot, then place the baking paper with dough in the pot, and close immediately with the lid.

Bake bake for 25 minutes with the lid on the pot. Then remove the lid and bake for another 15 minutes for a nice crust. For a whole bread: bake 10 minutes extra.

Cool the bread from the pot and let cool on a rack.
