What do you need?

Quantity: 4P

Biscuit:
3 yolks
3 eggs
110 g fine sugar
3 proteins
35 g flower
35 g cocoa powder (unsweetened)

Chocolate mousse:
340 ml whipped cream
3 yolks
45 g sugar
45 ml of water
200 ml of dark chocolate (min 70%)

Decoration:
100 g melted dark chocolate
Roasted hazelnuts made by gold powder

Biscuit:

Preparation method

How do you make this?

Imbibage: boil water, sugar and scraped vanilla sock with marrow for 5 minutes. Allow to cool and remove the vanilla pod.

Melt the chocolate flakes au bain marie or in the microwave. Always stir well every 30 seconds in the microwave, chocolate burns quickly!

Take a baking paper and pour the melted chocolate on top, spread very thin and evenly on the leaf.

Roll up and let it set at least 1 hour in the fridge.
