24 Black Tiger Scampi's
12 slices of smoked bacon
2 tbsp olive oil
1 big shallot
4 cloves of garlic
200 ml of white wine
70 g tomato concentrate
400 ml of Passata
125G Mascarpone
1 KL curry powder
1 KL chili powder or flakes
4 spring onions (for finishing)

Preparation method

How do you make this?

Peel the scampis, leave the rear part of the tail and remove the intestinal tract. Season with salt and pepper, wrap the scampis in half slices of bacon.

Fry the finely chopped shallot and garlic in the oil, add chili powder, curry powder and tomato concentrate. Bake briefly, extinguish with white wine, reduce and add passata. Let the desired thickness simmer.

Stir in the mascarpone, mix into a smooth sauce.

Grill the scampis on both sides and serve with the sauce. Finish with finely chopped spring onion.
