Courgettes:
4 courgettes (yellow and green mixed)
Pepper and salt
Dash of olive oil

TOPPINGS:
2 tablespoons capers
1 tomato
4 handful of arugula

Tonato sauce:
300 g tuna in our own wet, leaked
2 hard -boiled eggs
6 Anjovis fillets
Pepper and salt
Juice of 1 lemon
2 tablespoons of olive oil
2 tablespoons of mayonnaise (preferably homemade)
1 teaspoon capers
The flesh of 1 tomato (seeds and inside)
75 ml of chicken or vegetable broth

Preparation method

How do you make this?

Prepare courgettes: Cut the courgettes into discs. Season them with salt and pepper and sprinkle with a dash of olive oil.

Grilling: Heat a grill pan or barbecue and grill the courgettes on both sides until they have nice grill stripes and are soft. Then divide them over the plates.

Make Tonato sauce: Cut the tomato into four and remove the flesh. Put the tomato flesh together with the tuna, hard -boiled eggs, anjovis fillets, lemon juice, olive oil, mayonnaise, capers and broth in a food processor. Mix into a smooth, creamy sauce. Taste and season with salt and pepper.

Finish: Divide the Tonato sauce over the grilled courgettes. Garnish with capers, slices of tomato and arugula.
