1 boiled potato (leftover of the day before)
2 green asparagus

Preparation method

How do you make this?

Cut the red onion and red pepper into large pieces.

Heat 1 tbsp olive oil in a grill pan and add the onion, bell pepper, boiled potato and green asparagus. Season with salt and pepper.

Let the vegetables grill for ten minutes, shake them regularly and check if they are done. If necessary, leave them in the grill pan for a little longer.

Meanwhile, heat the remaining 1 tbsp olive oil in another pan and carefully break open the eggs. Fry the eggs with the lid on it until the egg yolk is still on foot.

Serve the grilled vegetables with the eggs. Add a stripe of balsamic vinegar and a few drops of olive oil. Season with salt and pepper.
