Cut the bacon into strips and fry crispy in a knob of butter with salt and pepper, put on kitchen paper.
Wash the radishes, cut them off with a small piece of stem and cut the radishes paper thin. For the foliage and pesto you remove the lesser leaves and do everything in a mixer with the other ingredients and mix into a coarse nice texture, I don't like to have it too nice. If your pesto is a bit too thick, add a splash of water, taste and season if necessary.
Spread the sandwiches generously with flat cheese and place on a board, season with salt and pepper. Divide all the bacon and radishes over it and then spoons of pesto. Finish with finely chopped spring onion.
