2 thick cuts of sourdough bread, preferably whole grain
1 ripe avocado
2 free -range eggs

For the coriander pesto:
1 forest coriander
½ forest flat parsley
80 g freshly grated Parmesan cheese
1 clove of garlic
Juice and rasp of 1 lime
1 handful of roasted sesame seeds
½ chili pepper (or to taste)
100 ml of soft olive oil
A pinch of salt

Extra:
Extra coriander for garnish

Preparation method

How do you make this?

Pesto: Place all the ingredients for the pesto in a cutter and mix until you have a creamy pesto with some bite. Taste and adjust the spice if necessary.

Toast: Coat the slices of bread generously with the pesto, make sure that the crusts are also covered. Place them in the basket of the Airfryer and roast them for 6-7 minutes at 200 ° C at high Airflow, until the pesto is beautifully colored and the bread is crispy.

Eggs: drop some oil and 2 spoons of pesto in the baking accessory and heat it for 2 minutes at 200 ° C. Break in the eggs and fry for 3-4 minutes, depending on the size of the eggs and your desired doneness. Season with salt and pepper.

Cut the avocado into slices and divide it over the pesto toast. Place the fried eggs on it and garnish with extra coriander.

Serve immediately.
