1 Red onion finely chopped
250 ml peanut oil
2 tbsp finely sliced ​​tarragon (dried is also possible)
1 tbsp capers

How do you make this?

Wash and steam the new potatoes and let them cool.

Put the yolk, mustard, white wine vinegar in a large bowl and mix. Pour the oil jet and keep beating until you get a thick vinaigrette. Season with salt and pepper, add onion, tarragon and hairdressers and mix, taste and season.

If necessary, cut the potatoes in half if there are a few larger ones in between, and mix everything under each other.
