What do you need?

200 g cold whipped cream
100 g dark chocolate (min. 70%)
2 egg yolks
50 g sugar
50 ml of water
2 tbsp cane sugar
1 handful of roasted hazelnuts

Preparation method

How do you make this?

Beat the whipped cream half and put in the fridge.

Melt the chocolate au bain-marie.

Boil water together with sugar for 3 minutes until you get a syrup.

Separate the egg yolks from the protein.

Beat the egg yolks.

Pour the syrup radically on the beaten egg yolks and beat until the whole is cold and pale.

Add the melted chocolate and stir.

Mix in half of the whipped cream.

Pour this mixture into the cold pot with the rest of whipped cream.

Mix well together.

Spoon the chocolate mousse on a plate and store in the fridge.
