What do you need?

2 packs of mini tortillas
500 g peeled black tiger scampi
2 tbsp Santa Maria Wok Spice
2 tbsp neutral oil
1 oak leaf lettuce, washed
1 lime

Pineapple-koriander salsa
¼ pineapple
1 pointed pepper
1 red onion
1 Bot Coriander
Juice of 2 limes
4 tbsp sunflower oil
Pepper and salt

Spicy Mayonnaise
3 tbsp fresh mayonnaise
1 or more hotsauce
Juice of ½ lime
1 KL look powder

Preparation method

How do you make this?

Pat the peeled scampi dry, open them and sprinkle with the wok herbs along both directions. Cut the pineapple into fine slices, then into strips and then into cubes. Finely chop the bell pepper, red onion and coriander.

Put everything together in a bowl, season with salt and pepper and mix the lime juice and the oil, keep aside. Mix everything for the spicy mayonnaise among each other, taste if the spicy is enough, keep aside.

Heat the tortillas as stated on packaging, or grill them short and powerfully in grill pan, keep warm. Heat the oil in your wok pan, add the scampi and fry for 3 minutes short, powerful and crispy.

Put all the bowls on the table and let everyone fill. Place a tortilla on your plate, lettuce, baked scampi, the pineapple salsa and finish with the spicy mayonnaise. Serve lime.
