Peel the beetroot with a peeler and cut them very fine, so that you can make beautiful rolls. Make 12 of these fine rolls and set them aside.
Put the remaining beetroot together with the sugar, vinegar, white wine, pepper and salt in a pan. Let it simmer and then put everything in a blender.
Add some water or white wine if you get a creamy mass (cream).
Cut the different types of tomatoes in various shapes and dress them nicely on the plates.
Peel the radishes with a peeler and divide the fine strings over the plates. Sprinkle with olive oil and season with salt and pepper.
Spoon a few desserts of red beet cream on the tomatoes and then divide the fruit and zurkel over the plates.
